With the pressure cooker function, the Instant Pot uses heat and pressure to quickly cook meals that might otherwise take hours. For example, rather than waiting 8+ hours for tender, shreddable pulled pork, a pressure cooker can do the job in an hour. It also does an outstanding job making beans, hard-boiled eggs, stocks, rice, egg bites, and roasts.
The 6- or 8-quart models are best for most people. You might want to start with the 6-quart Instant Pot and upgrade if necessary. Yet, an 8-quart cooker is better if you mainly cook larger meals. In our testing, we didn't see a difference in performance between the two sizes. Larger pressure cookers are available, but 10-quart and larger models seem to be overkill for most cooking and not worth the extra space they take up.
